  • 2 pounds small potatoes
  • 1/2 tub King Harvest Toasted Onion Hummus
  • 1 lemon juice
  • salt and pepper to taste
  • 2 stalks celery chopped
  • 1/2 red onion chopped
  • 1/2 cup chives finely chopped


  • Prepare the Potatoes: Wash and cut the small potatoes into bite-sized pieces. Place the potatoes in a large pot and cover with water. Bring to a boil over medium-high heat. Cook until the potatoes are tender, about 10-15 minutes. Check doneness with a fork. Drain the potatoes and spread them out on a baking sheet to cool. Place them in the refrigerator to chill.
  • Make the Dressing: In a small bowl, combine 1/2 tub of King Harvest Toasted Onion Hummus with the juice of one lemon. Season with salt and pepper to taste. Stir until well mixed.
  • Prepare the Veggies: Finely chop 2 stalks of celery. Finely chop 1/2 red onion. Finely chop a handful of chives.
  • Combine Ingredients: In a large mixing bowl, combine the chilled potatoes, chopped celery, red onion, and chives. Add the hummus dressing to the bowl. Gently mix everything together until the potatoes and veggies are evenly coated with the dressing.
