King Harvest Hummus Mediterranean Protein Bowl

Ingredients
  

  • 3 oz King Harvest Original Hummus
  • 2 cups baby arugula
  • 3/4 cup cooked quinoa
  • 1/4 cup English cucumber small diced
  • 1/4 cup kalamata olive wedges
  • 1/4 cup feta cheese crumbled
  • 1 oz cherry tomatoes halved
  • 2 tsp pepitas roasted
  • 2 tsp cilantro roughly chopped
  • 1/4 tsp kosher salt
  • 1/4 tsp freshly-cracked black pepper

Instructions
 

  • Fill bowl with a bed of arugula.
  • Top with quinoa, cucumber, olives, tomatoes, cheese, and pepitas. Season with S&P.
  • Finish with a large dollop of King Harvest Classic Hummus and cilantro. Enjoy!
